From autumn to the next autunm, I work in organically farmed vineyards. I make decisions on the land that eventually contribute to a wine’s energy and nervous tension.
Interpret .
Low yeilds, small berries, piquant stalks for whole bunch cuvees . Wild indigenous and spontaneous fermentations to enhance complexity and freshness. Controlled pigeage, hand and foot cap-submersion , bucket only pump overs, to keep the purity of the fruit. the expression of the vineyard is paramount.
Focus.
I aim to make wines with attention to detail that are natural and unadulterated.
Walking the vineyards at sunrise helps decide if the grapes have the acidity and natural sugar levels required. This experience of tasting grapes is so delicious that I can’t stop eating them. This determines the day they are picked.
Natural, low – sulphur levels , unfiltered , un-fined wine , nothing added , no nasties .
I have both feet in the soil but my head in the clouds.
